Akelese (Restaurant Manager) – Born in Mauritius, Akelese worked for prestigious hotel and cruise companies before becoming Senior Sommelier aboard the Queen Mary 2. He has been a constant support for Dawn and Alun from the early days of the Chilli Pickle. His knowledge of beverages, fine service and training has helped us to earn a reputation for service to match that earned by our food.
Rachida (Supervisor) – Born in France, from a young age Rachida helped out with the family catering business, making her a passionate foodie for life. She subsequently gained 20 years experience in catering and the travel industry. Rachida takes pride in inspiring our new team members with the Chilli Pickle ethos.
Nick (Supervisor) – Originally from Texas, Nick had a career in the civil service in New York before spending 14 years in catering. He moved to the UK to take a management position with a well-known international hotel company, before moving to Brighton to join the Chilli Pickle.
Vassily (Bar Supervisor) – Born in Russia, Vassily gained formative experience in California and the UK, including on the staff of a prominent Michelin-starred restaurant. Vassily combines old-style service ethics with an encyclopaedic knowledge of wine, beer and spirits.
The skills and experience of our specialist chefs allow us to innovate while staying true to traditional Indian methods. Our core team has joins us from across the subcontinent, representing the distinct cuisines of India’s capital, the southern states of Kerala and Tamil Nadu, the desert state of Rajasthan, and West Bengal on the mouth of the Ganges.
We are proud to support young chefs seeking to learn their trade as well as expand their horizons. To help young people take the first steps towards a career in the restaurants industry we run a thriving apprenticeships scheme in association with a number of local colleges.
