Assistant manager Akelese - Mauritius
He has been a constant support for Dawn and Alun from the early days in Meeting House Lane. Born in Mauritius with a pedigree of experience from Oberoi and Cunard, rising to Senior sommelier on the Queen Mary 2. His knowledge of beverage, fine service and training has helped us to build a reputation for good service as much as our food.

Supervisor Rachida
- Born in France, Rachida  has over 20 years experience in catering and the travel industry, from an early age she was exposed to the family restaurant business in France. Rachida is a passionate foodie and is a welcome addition to the new Chilli Pickle

Sous Chef Arjun
- Kathmandu Nepal 
Arjun has a great deal of experience in world class hotels working for the likes of Oberoi and Intercontinental as well as experience as a teacher of young chefs in Nepal and a learned culinary school book to his name. He brings experience and wisdom to the team

 

Sous Chef Sabu - Kerala India
Dawn and Alun met Sabu whilst on honeymoon; he was their cook and host on a houseboat in the backwaters of Allepey. Alun helped to get a job for Sabu in Dubai working with him for Jumeirah. Sabu has gone on from strength to strength and is now a great support in managing the larger brigade and driving the standards set as well as being a superb South Indian Chef

 

 

Aravind Kumar Calcutta India. Tandoor chef Kumar has a solid grounding of
experience from luxury Welcome Group in Maharastra in India where he learnt his trade, under the wing of old masters alongside his natural studious hunger to learn. He now manages the two large tandoor ovens we have in the open kitchen and we are excited his skills will now truly be brought to the fore.

Gouranga Chennai India
Master Curry and Garnish Chef. Worked for Ganga International, Residency Tower Chennai as well as experience in Malaysia and Singapore.  Gouranga has a solid rounded knowledge of his cuisine and his relaxed confidence is all so apparent in his execution.

 

Kanthi – Hyderabad India
Halwa/Pastry Chef – Schooled in Switzerland in the exclusive Gstaad as well as working for Taj in India Kanthi is our Pastry/Halwa chef. Brought up in Hyderabad the largest city in South India, famous for Biryani and Kebabs, but also a melting pot of many Indian cultures his early exposure was varied from the outset. Kanthi has a passion for his trade as well as a hunger to try new things.

Support.We have a great team in the kitchen of young chefs looking to grow and learn their trade. We have taken on a number of students from Newhaven College from India and Nepal who are over studying hospitality and are on work placement. We have also taken on an ambitious young chef from Equador and will be helping him to complete his NVQ level 2.
We have had a strong core service team who have moved from Meeting House Lane with us, that give us their continued support as well as some new members that have quickly fitted our mould and all share a passion for The Chilli Pickle
